We’ve had so many requests for a BBQ and smoking masterclass, and since we already have the incredible meat to work with, we are finally making it happen!
We’re teaming up with stateside grill mastermind Rick Swoboda, alongside our development chef Greg, to show you that whether you use a Kamado, charcoal, or gas, your BBQ no longer has to be limited to just burgers and sausages.
Throughout the session, we will guide you through:
Wood selection: Choosing the right fuel for authentic smoke profiles.
Versatility: Mastering the core principles of cooking on any BBQ setup.
The art of temperature: Low & slow vs. hot & fast techniques.
The prep: Butchery, brining and seasoning methods
Signature flavours: Crafting bespoke rubs, stateside sauces, curated sides and accompaniments.
And of course, we’ll be feasting on a proper, flavour-packed spread. The menu is a unique fusion of Central Texas soul with a Kiwi twist, all featuring the finest produce from God’s Own County.

Yes, we have a large carpark for our guests. Cars can be left overnight, but are done so at owners risk.
