Yves is a fully qualified chef de cuisine with more than 25 years’ experience in his native France, where he trained under the world-acclaimed chef Alain Ducasse. Having worked in Paris as a private chef for governors, politicians, corporate chief executives, and even Sir Richard Branson, Yves brings elite fine-dining mastery to every kitchen he commands. Yves made his home in Yorkshire after falling in love with ‘God’s own county’ during holidays. He creates signature dishes combining the traditional gourmet flavours of France with seasonal fresh Yorkshire produce. His philosophy centers on exceptional craft, culminating in “simply brilliant dining experiences”, a promise he consistently delivers.
This wealth of experience is now distilled into an exceptional menu, a reflection of his journey and expertise. Join Chef Yves for an immersive evening designed to showcase the vibrant union of classical French technique and locally sourced excellence. At the heart of the menu is a stunning centerpiece of locally sourced Sykes House Farm beef, a bourguignon-style, slow-cooked feather blade accompanied by dauphine potatoes, baby vegetables, crispy buckwheat, and a rich Bénédictine sauce. Beyond his mastery of savoury classics, he possesses extraordinary patisserie skills, renowned for creations like his breathtaking Cédric Grolet–inspired trompe-l’œil lemon dessert. A unique learning space set in the middle of our working farm, Method has been designed and built specifically to educate and inform our professional catering customers on all thing’s meat.
Method is also open to foodies and families for cookery and butchery masterclasses and exclusive events featuring some of Yorkshires top chefs.

We are located just outside Wetherby, you can find instructions on how to get here, and a map on this page.
Is there free parking?
Yes, we have a large carpark for our guests. Cars can be left overnight, but are done so at owners risk.
What if I have dietary requirements?
