More information

We are delighted to host Chef Varun Khanna for an exclusive culinary journey that bridges the vibrant spice trails of his heritage with the rich, storied larder of Yorkshire. This evening, starting with a welcome cocktail curated in the kitchen, is a celebration of a unique “North meets East” philosophy, rooted in a deep-seated passion for world-class local ingredients reimagined through a modern Indian lens. Head Chef at Rhubarb in Harrogate, Varun brings an inventive perspective to the kitchen, exploring how classical ideas can be refined, reimagined and occasionally given an unexpected twist reflecting touches of his Indian heritage.

Tonight’s ten dishes, comprising eight courses and two snacks, are born from a journey through seasonal creativity. Varum is proud to showcase the exceptional produce of Sykes House Farm, featuring lamb from local farmer Tom Kilby at Thorp Arch, whose animals graze in the fields just outside Method.

Born and raised in Yorkshire, Varun Khanna is a chef known for combining refined modern British cooking with subtle Indian influence, shaped by his heritage and experience in Michelin-starred kitchens. His style focuses on bold flavour, precision, and clean presentation, with an emphasis on seasonality and thoughtful technique rather than overcomplication. Alongside leading the kitchen at Rhubarb, Varun’s cooking reflects a balance of classical training and personal identity, creating dishes that feel elegant, expressive, and deeply rooted in flavour.

Due to the bespoke nature of the menu, dietary restrictions cannot be accommodated. Menu can be subject to slight changes.
